Why Vegan?

To give you a little further background of myself, just thought I would share a few reasons why I'm vegan.
  • Vegan is how it all began - after all, there were no meat (let alone, dairy) products in the Garden of Eden
  • A vegan diet takes less toll on our bodies
  • The nutrients and vitamins our bodies need can be derived WITHOUT supplements!
  • It's more humane 
  • It's better for the environment in so many ways - less packaging, less grains grown to feed animals, more grain straight to the mouths of people
  • There are limitless ways to enjoy foods - so many varieties of fruits, veggies, grains, legumes that can be prepared in countless cultural and ethnic dishes
  • Simply, it's healthier

It All Started with the Love of Food

There are so many people on this planet, each distinctly unique from one another; so I don't know if you're anything like me... But chances are there is one thing you and I have in common - the desire for tasty, yet healthy, food. But who has time in this busy world to create a balanced meal, especially when many healthy recipes call for out-of-the-ordinary ingredients? I can't tell you how often I've found a recipe on Pinterest that looked oh, so delectable, only to pass it up because of the odd ingredient that certainly wasn't in my pantry.
As I share recipes, I hope to make them as simple as possible, using ingredients found in your everyday kitchen. Occasionally, you may see a new ingredient, but bear with me - it's probably something that you'll use often if you actually stock it and follow more of my recipes. I'm super thrifty myself, so if I have to buy something pricey that is only going to be cooked with once, it's a no-go. My husband and I live on a fairly restrained budget, so affordable, healthy, and tasty are key. (Special emphasis on tasty, since he has an aversion to vegetables. How you can grow up vegetarian and not like vegetables is beyond me... :P)
For me, cooking is relaxing. It's a place I go to to let my creativity run wild, but I also understand that some find it mere drudgery and want the quickest option available. My goal is to help you master efficiency and have your taste buds begging for more! Some recipes have been passed down to me from family, some are new finds, while others are modified to fit the vegan lifestyle. Whatever the origin, I'm sure you'll find many to love as your own.
